I know it’s been a hot minute since I shared my last overnight oats recipe, but this recipe for Pumpkin Pie overnight oats is too good not to share! I’ve been having these for breakfast everyday for weeks now and I’m still not sick of them. Just like with my Pear and Cherry overnight oats, I make this on Sunday’s to have for the work week. Riggins loves when I make these because he gets the leftover pumpkin.With “pumpkin spice” everything on the market right now, I love these because they really are pure pumpkin without any artificial flavors or added ingredients. To me, they taste like a pumpkin oatmeal cookie.
The original recipe called for a whole banana in each serving, but I found that too filling. I cut it down to half a banana and a little over 1/2 cup of almond milk and it’s the perfect portion to keep me full until lunch.
