Sparkling Cranberry Apple Cider Mocktail

  • Hope you had a great Thanksgiving! I think I might still be recovering from Thanksgiving. Hosting a holiday dinner at nearly 39 weeks pregnant may have been a little ambitious, but we survived!sparkling cranberry apple cider mocktailI served this Sparkling Cranberry Apple Cider mocktail with appetizers on Thanksgiving Day, but it will be great throughout the holiday season. We actually had it on Saturday brunch as well and I thought it was the perfect complement to the pumpkin waffles I made!

    I’m counting down the days until I can trade in mocktails for cocktails, but I was surprised how much everyone liked it sans alcohol. I think it would taste even better if you swapped the ginger ale for champagne, but let’s be honest I think most things are better with champagne. 🙂 Cheers!

    Instructions
    1. In a small saucepan, combine the cranberries and water and simmer for 2-3 minutes until the cranberries pop and split.
    2. Remove from the heat and stir in the sugar. Let cool to room temperature (or chill in the refrigerator). I forgot about this step, so I just stuck the saucepan in the freezer for about 10 minutes.
    3. In a 2-quart pitcher, pour in the cranberry mixture. Add the apple cider, ginger ale, lemon juice and cranberry juice. Mix and serve.
